Fruity Tapioca Jelly Drink

1 cup fruit juice (mango, passion fruit, or any juice of your choice)
1 tbsp agar-agar powder (vegetarian jelly setting agent)
2 tbsp sugar (optional, depending on the sweetness of your juice)
For the fruity drink:
2 cups fruit juice (you can mix different juices like mango, pineapple, or strawberry)
1/2 cup coconut milk (optional, for creaminess)
Ice cubes (optional, for extra chill)
Instructions:
Make the tapioca pearls:
Boil 4 cups of water in a pot. Once boiling, add the tapioca pearls.
Stir gently to prevent sticking, and cook for about 15-20 minutes (or according to the package instructions). Once cooked, the pearls should become soft and chewy.
Remove from heat and let them sit for 10 minutes. Drain the tapioca pearls and rinse them under cold water.
In a small saucepan, mix 1/4 cup water with the brown sugar to make the syrup. Bring it to a simmer until the sugar is fully dissolved.
Pour the syrup over the tapioca pearls and mix well. Set aside.
