In a small saucepan, combine the fruit juice, agar-agar powder, and sugar (if using).
Bring to a boil while stirring frequently, and let it boil for 2-3 minutes until the agar-agar powder is fully dissolved.
Pour the mixture into a shallow dish or silicone mold and let it cool to room temperature. Once cooled, refrigerate for about 30 minutes to set.
Once set, cut the jelly into small cubes or strips.
Prepare the fruity drink:
In a large glass, mix your choice of fruit juice with coconut milk (optional). Stir well.
Add ice cubes if you like it extra cold.
Assemble the drink:
Add a few tablespoons of the tapioca pearls to the bottom of a tall glass.
