Spinach and Feta Casserole

  • 2 cups (300 g) fresh spinach, chopped
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 3 large eggs
  • 1 cup (240 ml) milk (or cream for a richer version)
  • 1 cup (120 g) crumbled feta cheese
  • ½ cup (60 g) grated Parmesan cheese
  • ½ cup (60 g) shredded mozzarella cheese
  • ½ tsp dried oregano
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • ½ cup (60 g) breadcrumbs (optional, for topping)
